4 10-ounce packages Cascadian Farm frozen blackberries, thawed
2/3 cup sugar
1 tablespoon fresh mint, minced
2 teaspoons cornstarch
1/2 teaspoon kosher salt
1/2 lemon, juice only

ALL-BUTTER PIE CRUST:
1 1/4 cups all-purpose flour
1/2 teaspoon kosher salt
1/2 cup unsalted butter, cold and cubed
1/4 cup ice water

GRANOLA TOPPING:
2 cups Cascadian Farm Oats and Honey granola
1/4 cup brown sugar
1/4 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon kosher salt
6 tablespoons unsalted butter, melted

1. To start the filling, let the berries thaw slowly in a colander over the sink. Once they are mostly thawed, toss berries with sugar, cornstarch, and salt and let sit for 15 minutes to drain more. Then stir in lemon juice and fresh mint.

2. Meanwhile, for the crust, stir together flour and salt in a medium bowl. Then cube the cold butter and use your fingers to work the butter into the flour mixture until it is in peasized pieces.

3. Stir in ice water until it forms a dough ball. Knead the dough a few times just to bring it together.

4. Wrap the dough with plastic wrap, and refrigerate for at least 30 minutes.

5. To make granola topping, stir together granola, sugars, cinnamon, and salt in a small bowl. Drizzle in melted butter and stir to combine. Set aside until needed.

6. Preheat the oven to 375 degrees F. Take dough ball out and roll it out on a lightly floured surface. Work slowly so the dough doesn’t crack a lot. Roll the dough out until it’s at least 12 inches in diameter and then carefully transfer the dough to a 9-inch pie dish. Work the dough into the pie dish corners.

7. Add the berry filling to the pie dough and cover completely with the granola topping.

8. Bake the pie at 375 degrees F for 50-55 minutes total until the crust and granola is a deep, golden brown color.

9. Let the pie cool for at least 30 minutes before slicing and serving!
