Maple Pecan Cookies

Grab a glass of milk! These crunchy maple pecan cookies are nutty, sweet, and sure to cure your midnight snack woes.


Ingredients

  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup turbinado sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 2 1/4 cups all-purpose flour (can sub gluten free all-purpose flour)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 cups Cascadian Farm™ Organic Cinnamon Raisin Granola
  • 3/4 cup raisins
  • 3/4 cup chopped pecans

Preparation

  1. Step 1

    Heat oven to 350°F. In a large bowl, beat butter, sugars, vanilla and eggs with electric mixer on low speed until light and fluffy. Beat in flour, baking soda and salt until well mixed. If you don’t have a hand mixer a whisk will also work!
  2. Step 2

    Stir in granola, raisins and pecans.
  3. Step 3

    Onto ungreased cookie sheet, drop dough by rounded tablespoons 2 inches apart.
  4. Step 4

    Bake 13 minutes or until light golden brown. Cool 1 minute; remove from cookie sheet to cooling rack.
