Cascadian Farm Peach Galette

A beginner’s pie with wonderful peaches. You don’t even need a pie pan to make this!

2 10-ounce packages Cascadian Farm frozen peaches, thawed
1/4 cup sugar
1/4 cup brown sugar
1/4 cup all-purpose flour
1/2 teaspoon cinnamon
1/2 teaspoon kosher salt

GALETTE CRUST:
1 1/2 cups all-purpose flour
1/2 teaspoon kosher salt
3/4 cup unsalted butter, cold and cubed
1/3 cup ice water

1. To start the filling, let the peaches thaw slowly in a colander over the sink. Once they are mostly thawed, toss peaches with sugars, flour, cinnamon, and salt. Let sit for at least 15 minutes to drain more.

2. Meanwhile, for the crust, stir together flour and salt in a medium bowl. Then cube the cold butter and use your fingers to work the butter into the flour mixture until it is in pea-sized pieces.

3. Stir in ice water until it forms a dough ball. Knead the dough a few times just to bring it together.

4. Wrap the dough with plastic wrap, and refrigerate for at least 30 minutes.

5. Preheat the oven to 400 degrees F. Take dough ball out and roll it out on a lightly floured surface. Work slowly so the dough doesn’t crack a lot. Roll the dough out until it’s at least 16 inches in diameter and then carefully transfer the crust to a baking sheet lined with parchment paper.

6. Add peach filling to the center of the crust and fold edges of crust over the peach filling. The crust should fold a few inches up over the edge of the galette.

7. Once the edges are folded up, bake the galette at 400 degrees F for 50 minutes total until the crust is golden brown.

8. Let the galette cool for a few minutes and then slice into 8 even pieces and serve.
