We love a good muffin in our house. They are perfect for a breakfast indulgence, a quick snack when the kids come home from school or an easy pick me up as you are headed out the door. 

We especially enjoy this recipe for Cascadian Farm Ancient Grains Granola Muffins with a Cinnamon Brown Sugar Topping. If you haven’t ever thought of adding granola to your muffins then this recipe will change your mind forever! I added the Cascadian Farm Ancient Grains Granola to the muffin mix, which is the perfect way to add a great texture and some natural and healthy grains like quinoa, spelt and kamut, into these wonderful little muffins. The granola is lightly sprinkled with cinnamon and brown sugar so it only made sense to echo those flavors with a cinnamon brown sugar topping on each muffin. They both complimented each other perfectly!

This batter is super simple to whip up and because it’s so easy it’s a great recipe for your little ones to help with. My son loves to help scoop the batter into each muffin cup and especially likes helping sprinkle each muffin with the tasty cinnamon and brown sugar topping. At times he is a little heavy handed with the topping but hey, we all deserve a little indulgence some times, right!

Once you slip these muffins in the oven, the aroma of the cinnamon and sugar granola and topping will leave you counting down the seconds until they are ready to take out of the oven and will have everyone in the house running to the kitchen!

Ancient Grains Granola Muffins with Cinnamon Brown Sugar Topping
Yield: 12 muffins

Ingredients:
2 cups all-purpose flour
1/3 cup granulated sugar
1/3 cup light brown sugar
2 teaspoons baking powder
½ teaspoon salt
½ cup unsalted butter, melted and cooled
2 large eggs, lightly beaten
2/3 cup buttermilk
2 teaspoons vanilla extract
1 1/2 cups Cascadian Farm Ancient Grains Granola

For the Topping:
1/2 cup light brown sugar
1/3 cup all-purpose flour
1 teaspoon cinnamon
3 tablespoons melted butter

Directions:
Preheat the oven to 375 degrees F. Line 12 muffin cups with paper liners or spray with cooking spray. Set pan aside.
In a large bowl whisk together flour, sugars, baking powder, and salt.
In medium bowl stir together melted butter, eggs, buttermilk, and vanilla extract until well blended. Make a well in the center of the dry ingredients. Pour the liquid mixture into the well and gently stir until combined. Stir in granola.
To make the crumb topping, in a small bowl, combine brown sugar, flour, cinnamon, and melted butter. Mix with a spoon until crumbly.
Fill the prepared muffin pan with muffin batter, filling each cup about 3/4 the way full. Sprinkle each muffin with crumb topping. Bake for 17-20 minutes or until a toothpick comes out clean. Remove muffins from the oven and allow to cool before serving.
