Back to School Lunches
Selena Kohng of How About Cookie

I never thought I’d be one of those moms—you know, the kind who makes cute shapes out of fruits and veggies and packs lunches in bento boxes.

And then I became one of those moms.

I started so that my then-kindergartener would be motivated to eat at school, and to help him feel like he has a little piece of home with him. He and his older brother ate their bentos up (literally), and I discovered that making healthy lunches every day is actually really easy. Really.

Now that back-to-school season is in full swing, I’m brainstorming lunchbox ideas. I use whole foods as much as possible, but I like to keep organic products handy, too. Cascadian Farm’s new protein granola and protein granola bars have 9-10g of protein, perfect for filling up kids during a long school day. Here are a few lunch ideas to get your creative juices flowing:

Pencil Bento

Sharpen your lunch-packing skills with a few simple tweaks. Cut a regular sandwich into a pencil shape and top with cheese, ham, and an olive tip for a fun school-themed lunch. The Honey Roasted Nut Protein Granola Bar uses pea protein and is a perfect fit in the Easylunchboxes container.

DIY Lunchables

My kids love Lunchables, and making our own with healthy ingredients is so much better for them—and cheaper. I use nitrate-free ham, organic cheddar cheese, and GMO-free crackers in silicone muffin cups. The Peanut Butter Chocolate Chip Granola Bar cut in half and a few apple slices finish off this fun meal.

Pasta Salad Bento

Not every lunch has to be cutesy: leftover pasta salad with veggies, fruit and cheese in this Yumbox container are just as appealing. This Dark Chocolate Coconut Protein Granola comes in nibble-worthy nuggets, a perfect dessert.

After-School Snack

The first thing my kids say when I pick them up from school? “I’m hungry.” Yogurt parfait is one of their favorite snacks; I can pack it in the morning after making their lunches, then leave it in the fridge in this ECOlunchbox container. Organic yogurt, mixed berries, and some Apple Crisp Protein Granola make a nourishing, satisfying snack.
