Strawberry Frozen Yogurt with Dark Chocolate Almond Granola

In our house we are always looking for something refreshing to cool us off in the hot summer months. What better way than with some ice-cold homemade frozen yogurt. Now don’t be intimidated by the words homemade frozen yogurt, this recipe couldn’t be simpler and will be worth every minute of your time! It’s as easy as chop, blend and freeze. The hardest part about making this frozen yogurt is waiting for it to chill. It will be a test of your patience! 

This recipe is so easy even your kids can help. In fact, my son loves to help pick out the perfect frozen strawberries from the bag of Cascadian Farm Organic Strawberries. Of course, they are all perfect little gems so it’s not hard to choose. The strawberries are so sweet and make this frozen yogurt really tasty.  I also added yogurt instead of cream to the recipe and included a touch of lemon juice and zest to help give it just a little bit of tang and even more freshness. And if your kids are like mine then they will love trying to scoop out any last bit of puree that is left in your blender after placing the mixture in the freezer. My son showed serious dedication as he sat on our counter for nearly 10 minutes sure that he could scrape out just one last drop. What can I say, it’s that good!

Strawberry Frozen Yogurt Topped with Dark Chocolate Almond Granola

2 cups frozen Cascadian Farm Organic Strawberries, divided
2/3 cup granulated sugar
1 cup plain yogurt 
1 teaspoon fresh lemon juice
1 teaspoon fresh lemon zest
1 teaspoon vanilla extract

Start by dividing your frozen strawberries. Separate ½ cup of the frozen strawberries and place them in the freezer until ready to use. Roughly chop the remaining 1 ½ cups of strawberries and place into a food processor or blender along with the sugar, yogurt, lemon juice, zest and vanilla. Pulse until the strawberries are completely combined and the mixture is creamy, about 5 minutes.  Remove the ½ cup of strawberries from the freezer and chop them, making sure there are no large pieces. Add the chopped strawberries to the mixture and fold them in. Chill the mixture for at least 1 hour, and then freeze in your ice cream maker according to the manufacturer’s instructions. When you are ready to serve sprinkle each serving with desired amount of Cascadian Farm Organic Dark Chocolate Almond Granola.
