Chocolate Coconut Energy Bars
Loaded with satisfying ingredients like chia seeds, hazelnuts and coconut, these energy bars are an after-school snack favorite!
- 2 cups Cascadian Farm™ Organic Dark Chocolate Almond Granola
- 1/2 cup chopped hazelnuts
- 1/3 cup coconut flakes
- 1/4 cup chia seeds
- 2 ripe bananas
- 3/4 cup peanut butter
- 2 tablespoons honey
- 1 teaspoon vanilla
Step 1Preheat oven to 350 degrees. Line an 8"x8" pan with parchment.
Step 2In a medium bowl, mix together the granola, hazelnuts, 1/4 cup coconut flakes, and chia seeds. In a separate bowl, mash the banana until smooth. Stir in the peanut butter, honey, and vanilla until incorporated.
Step 3Pour the peanut butter and banana mixture into the granola. Stir to combine and coat. Press the mixture into the parchment-lined pan. Sprinkle with remaining coconut flakes and a handful of chopped hazelnuts.
Step 4Bake for 25-28 minutes, until center is set. Remove from the oven and allow to cool before cutting into bars.
