Cilantro Lime Cauliflower Rice

With cauliflower rice, lime, and cilantro this easy to make blend makes the perfect base for a quick weeknight meal!


  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1 bag (10 oz) Cascadian Farm™ frozen organic riced cauliflower blend with bell peppers and onions
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped fresh cilantro


  1. Step 1

    In 10-inch skillet, heat oil over medium-high heat. Cook onion in oil 1 to 3 minutes or until onion begins to brown. Reduce heat to medium; stir in frozen cauliflower, cumin and salt.
  2. Step 2

    Cover; cook 9 to 12 minutes, stirring occasionally.
  3. Step 3

    Remove cover and continue to cook until vegetables are crisp-tender.
  4. Step 4

    Stir in lime juice and cilantro.
  5. Step 5

    Mix in protein to make a full meal or serve as a side dish.
