With cauliflower rice, lime, and cilantro this easy to make blend makes the perfect base for a quick weeknight meal!
Ingredients
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1 bag (10 oz) Cascadian Farm™ frozen organic riced cauliflower blend with bell peppers and onions
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1 tablespoon fresh lime juice
- 1/4 cup chopped fresh cilantro
Preparation

Step 1
In 10-inch skillet, heat oil over medium-high heat. Cook onion in oil 1 to 3 minutes or until onion begins to brown. Reduce heat to medium; stir in frozen cauliflower, cumin and salt. -
Step 2
Cover; cook 9 to 12 minutes, stirring occasionally. -
Step 3
Remove cover and continue to cook until vegetables are crisp-tender. -
Step 4
Stir in lime juice and cilantro. -
Step 5
Mix in protein to make a full meal or serve as a side dish.
